You could use cooked shrimp but I used frozen uncooked shrimp. Remember even uncooked shrimp only need a few minutes of cook time. When they turn pink and begin to curl remove them from the heat.

That is the carb & calorie beard down? It looks like it could be modified with whole grain pasta...I might actually try this, but first I am goining to modify a couple things.

I added pickled dill chips with the toppings and all of the pesto before baking because I want it to be moist! Turned out so good! I recommend this recipe!

I use Old El Paso. But you're right there are some really bad ones out there. I live in a very small town and we don't have much to choose from. I ventured out once and tried another and it was horrible. So for now, until I can find a better one it's the Old El Paso for me.

I'm working on other recipes besides this dish that will include lemongrass. There are many uses for it. You could use it as a flavoring for any cuisine. I'm thinking of making a cool dressing with it or maybe a soup. I have so many recipes on my list it's very hard to get to them all at once. ;0)

Janet,

What other recipes would you use the Lemon Grass in besides the shrimp dish. I was able to find it at my local store. I have not tried it yet...
Is it aimed at enhancing seafood, Japanese cooking, pasta??

Thanks...

Sorry been busy at the cafe this week. The fruit is the same. You don't have to decrease it. But if you don't like that much fruit just decrease by 1/4 cup of fruit and decrease the sugar by 1/2 cup.
