Lately, my mind’s been racing with strange and silly no-good feelings, I’ve had a hard time focusing, and I haven’t been able to turn it off.  In cooking, you can add a raw potato to absorb an excessive amount of salt, but in real life there is no tried and true ingredient that magically dissolves the off taste.  I pray a lot!  And while that seems to direct my attention or worry to a place where all heavy loads are better handled, I seem to be good at taking it back and repeating that vicious cycle all over again which then makes praying a chore in itself.  The whole “admit it and quit it” method is making a believer out of me but I struggle with the notion that somehow that it’s irresponsible if I don’t spend loads of time pondering and analyzing it and yes, worrying.

It seems I spend more than my fair share of time going treasure hunting amidst the storms in hopes of finding the little sprouts of sunshine peering through the deep dark ominous clouds.  But as always I found a little sunshine when I searched and I highly recommend treading through your own personal trying time grasping and holding tightly to the mindset of what I like to call “treasure hunting”.   Every journey if you dissect and pull back the layers comes equipped with some treasure be it literal or lesson learned–all part of an integral life lived.  My grief strewn dilemma included two weeks of my 10-Minute meal web site being down.  It kept crashing and short of believing we were the target of a band of low life hackers, it was a mystery that was costing me money and even had me thinking I might have to really pour some energy in stepping up my game in my other adventures to put food on the table.  Until, that is I found out why.  Eighteen thousand viewers of this beautiful dish I call “Cod Bless America” caused an overload on the server thus making it shut down.  The week before it was the lovely chocolate dessert boasting twelve thousand viewers.  I’m new to this genre of business and I had no idea my following grew to that extent.  I won’t go into the particulars of what this means in terms of “how’s business going”.  I’ll just say this, it’s all good. What appeared to be a huge unidentifiable problem is actually an easy fix–increase the server but more importantly it alerted me to the fact that my hard work that received little accolades in the way of financial reward is now paying off in potential I only hoped for and now believe I am going to be able to count on.  Try this new recipe.  The numbers don’t lie.  It’s a hot one just in time to beat the heat.

A light and fluffy perfectly satisfying fish with a little twist.

  1. n a medium bowl pour vinegar in a bowl along with the basil, onions, and 2 cloves of minced garlic. Whisk in the olive oil. Pour over filets in a large saute’ pan. Cover. Cook for 5 minutes on medium high heat. Turn, cook for another 3 minutes or until the fish is cooked through. This would be a good time to toss in some tomatoes. In another large skillet drizzle enough olive oil to cover the pan. Turn the heat on high and saute’ the garlic for 30 seconds. Drop the spinach in and stir until all is coated. Put a lid on it and wait until it all becomes wilted. You may have to stir it a few times. On a plate place a generous portion of spinach and place a file on top.
