Crab Ceviche

My inner struggle between good and evil took place in silence with only my facial expression revealing my discomfort to anyone who dared to look at me face to face in the world of crazy otherwise known as the mall on Saturday.    Yes, I wanted to be joyful but with each turn my phobia of mass amounts of people being elbow to elbow kept wailing, “Go home, girl who can’t hang!” Incidently, I do think I have a fear of crowds.  (sniffle) Nevertheless, traffic was backed up on the interstate to get in that mad house and had I not unknowingly passed the point of no return, I most certainly would’ve turned back promising to return at “crack-thirty” Monday morning.   I had a moment of sheer madness that made for a carbon copy of an abridged version of “Miracle of 42nd street” minus the happy ending of the realization that being good and kind is actually a better place to be.  After the fourth elbow nudging my shoulder quite hard in fact, I decided to think happy thoughts and run for cover.  So, I saw a movie and a happy zen state of mind followed.

Fortunately, I made an appetizer to end the chaotic day that I must share with you.    It was a trial run for the upcoming New Year’s evening that may or may not include a few close friends and family. Sometimes, a heavy meal is just too much and if you’re like me a flavor hearty snack hits the spot just fine.  Crab ceviche is the answer to the flavor this chick is craving.  And, the Christmas colors this light meal boasts makes it a perfect choice for your holiday gatherings.

  1. In a food processor combine the tomatoes, garlic, cilantro, onion and paprika. Rough chop. Add the juice and combine it in a large bowl with the crab meat.
