Revisiting one of the greats, I made this pineapple-upside-down cake for the cafe the other day and just have t0 share this recipe. Recipe sounds as if there’s actually some detailed steps that needs to be adhered to but actually it’s so simple yet exquisite in flavor no one will ever know the cake comes from a box. The best part is I’ve managed to make this without using a cast iron skillet which is the preferred method. The fact is I can’t find my big skillet and I may have to resort to buying a new one. But in a pinch it can definitely be made in a 9 x 11 inch pan. The moist buttery flavor will wow anyone who eats it. In my cafe the bread pudding is the main attraction but on an unsuspecting day I introduced this delucious dessert and it certainly gave the long time cafe favorite a bit of competition and actually won in popularity that day. In my world of busy beyond comprehension a dessert I can do in minutes and taste this good is akin to balancing the trillion dollar deficit I keep hearing about in the news. Yea, I know I’m a bit dramatic but it’s my story and I’m sticking to it. When you see the smiles from those who eat, I mean devour their slice of heaven you serve, you’ll know what I mean.
It’s a bit of a confidence booster making so many people happy with the cooking creations I make and suffice it to say I’m letting you in on this little secret. Though, in reality it might be selfish in that you’ll be doing it for your own reward (feeling good). Everybody wins because they get to eat it and might even think you did it just for them. Pinapple Upsidedown Cake

A delucious classic tricked out with a few simple changes. You will dazzle the hearts of many with this perfect dessert.
Ingredients
- 1 yellow cake mix Duncan Hines Rules
- 1 cup brown sugar firmly packed
- 1 can pineapple rings
- 1 stick butter
Instructions
- Mix cake according to the box. Except include the juice left over from the can of pineapple to make up the water used in the instructions for the cake.
Place the butter in a 9 x 11 inch pan in a 350 degree oven. Melt. Add the sugar to the bottom and spread evenly. Now place the pineapple rings evenly throughout the bottom. Pour the cake batter over top of the pineapple and sugar. Bake according to the box.
When you serve this, flip the square of cake up so that you expose the pineapple and brown sugar. It is unbelievable tasty.
