I met cream cheese and then thought of lemon zest and while the two are very different and maybe even opposites they seem to have gotten along pretty well in this luscious dreamy frosting. I wondered if raspberry might like to join in for the pop of color and its other redeeming qualities that are for certain a perfect celebration of extraordinary like tangy and tart for example. I’m not so sure they’re into me but I can say without hesitation I’m lost in their sweet beautiful loveliness which brings me to my contribution to this year’s Thanksgiving feast–raspberry-lemon cream cake. If you’re at a loss as what to bring to the big dinner that tops all others in a year, might I suggest you skip the urge to buy something already prepared at the store and go for a perfect compromise that seriously only takes minutes to prepare from start to finish. Buy the cake but add your personal touch with this cream cheese lemon frosting and trust me, you will make everyone think you not only know your way around the kitchen but that you actually spent some time thinking about the gracious invitation to belly up to someone else’s table and nosh on a dinner that someone else prepared.
It will be a big hearty “thank you” in the form of a tasty dessert that will no doubt top anything there, even the beloved pumpkin pie.
Raspberry Lemon Cream Cake

A very quick 10-minutes start to finish dream cake. Luscious raspberries with a hint of lemon, doused with days and days of cream cheese frosting make this a to die for cake.
Ingredients
- 1 pound cake purchased at Kroger
- 2 sticks butter softened
- 1 8 1/2 oz. cream cheese softened
- 1 tsp. lemon zest
- 1/2 tsp. lemon oil
- 1 tsp. vanilla extract
- 1 pkg. frozen raspberries
Instructions
- In a food processor combine butter, cream cheese, lemon zest, lemon oil, vanilla extract and combine til smooth. Now add the sugar.
There is plenty of frosting so layer your first bit thick on the one cut cake. Top with raspberries. Now add the next cut of cake. Top with more frosting and top with raspberries. Repeat with the remaining frosting and raspberries.
