Shrimp Scampi

Such an easy recipe and meal that only takes a minimal amount of time. Very rich in flavor as well.
Ingredients
- 1 1/2 lb. big fluffy tiger shrimp peeled and deveined
- 3 T. olive oil
- 3 T. dry white wine
- 3 tsp. lemon zest
- 1 1/2 sticks butter softened
- 4 cloves garlic
- 1/2 red onion
- 2 tsp. fresh rosemary leaves
- 3/4 panko bread crumbs
Instructions
- Preheat the oven to 425 degrees.
In a mixing bowl combine the shrimp, olive oil, wine and lemon zest and let that marinate.

- In a food processor combine 1 1/2 sticks of butter, 4 cloves garlic, onion, rosemary. Mix til fully blended and using a spatula scrape it into a bowl and add the bread crumbs. Mix thoroughly.
- Spoon the buttery panko mixture on top of the shrimp.
- Bake at 425 for 10-15 minutes until the shrimp turn pink and the top is slightly browned.
