Seeing how there is a bright side to everything, on a whim I often allow my creative juices to flow as I  throw caution to the wind.  Sometimes I toss ingredients together even though I have huge doubts that they will be in any way edible.  Adventurous as I am, it begs the question–Why is this?  It’s because I live in a world I affectionately call Hope. I live to be surprised by my own hand.  And of course, there’s the  “nothing ventured nothing gained” creed that I could’ve authored but found myself born too late in late life for that discovery.  My contribution  –in the way of famous quotes circulating in society–might be better summed up as “more than ten, messes with my zen.” 10-minutes that is.

Often enough, my expectations are exceeded.  For example, I attended the Greek Festival this weekend and found their food to be enormously tasteful and full of life.   I had a souvlaki with tzaziki sauce.   Without question I couldn’t wait to get home and make my own version.  While I loved their rendition of the sauce, I kept thinking it was so delicate as cucumber is the main ingredient.   I’m thinking a little lime, some rosemary, garlic, cream cheese, and red pepper along with the cucumber should make the souvlaki even better or maybe even fabulous.

  1. Grill the chicken that’s been seasoned with salt, pepper, garlic, and onion powder. Warm the flat bread either in a 200 degree oven or in a microwave for about 40 seconds. Now cut the chicken in cubes or take the pulled chicken and place it on the flat bread. Top with spinach, onion, and tomatoes. Now pour a generous portion of tzaziki sauce on top and fold the bread and eat.
  2. 1/2 cup yogurt 1 cucumber washed cut in three sections 1/2 tsp. red pepper 1/8 tsp. salt just a pinch of dried rosemary 2 cloves garlic 2 T. lime zest In a food processor combine all the ingredients and blend til smooth.
  3. The ingredients can be piled on the flat bread and you can use the sauce to dip. It’s awesome.
