Spicy Chicken Empanadas

It is so cool when I feel like I’m the master of my own universe.  A whole day can go by and no one says a word in my house.  The second the pots start clanging and the water starts running everyone knows something is going on in the kitchen.

Fairly soon after and not a minute before the smells go tattling to anyone within smell’s reach there’s a reason to visit the heart of the home to see what’s going on.  Yea I know it’s a tricky little plan I devise one that is slightly manipulative and even if it’s not because we all have to eat, it still kind of is.  The day that I untangled duty from cooking and inserted strategy into cooking was the happiest day of my life.  But not near as exciting when I realized I could use my skill in getting what I wanted. (insert evil laugh)  Check it out:  Let’s say it’s been at least a few days since you’ve witnessed anyone volunteering for any chores, compliments, or even positive conversation of any sort including a gratuitous grunt from anyone besides you in your home.  We’re all hedonists at heart.  Not only do we want all these pleasant exchanges within our family we’d like it with a smile as well.  And how else better to conjure the love but by a peace offering such as food.  After all, is hunger ever really satiated?  Only for a brief moment in my world.  Sounds like a strategic plan where everyone wins.  They get to eat and I get whatever I’m aiming for at the moment.  See the picture.  I needed an extra hand.  He was instructed, “You can’t eat this until I get this picture.”  “Will you hold it in the dipping sauce while I get the shot?”   And then conversation ensued.  We started talking about the different flavors and how the sauce needed this or that and before I knew it he gave me a small update about his week and how it was coming along.  Then back to the food again.

Yeah, he walked right into that one.  I’m smiling and he thinks I’m enjoying our conversation which I am but I might be reveling, just a lil’ bit as I watch the grand scheme play out.  Like taking candy from a baby.

This recipe takes a little more time than 10-minutes but the taste and the creamy flavors pay extra dividends.  So again, win-win!

Instructions

  1. In a small pan add the oil and saute the garlic for one minute. Add the cream cheese, hot sauce, and teriyaki sauce. Stir until creamy smooth. Add the chicken.

  2. Take individual wontons and moisten around the edge. Add a tsp. of the chicken mixture in the middle and fold over and press. Set aside.

  3. Add 1/4 cup oil to a large skillet. Place the filled wontons in the skillet and fry over medium high heat. Turn when the side is golden brown.
