Words are ubiquitous and so is food. Sometimes I spend a questionable amount of
time searching one word to center an entire thought or idea. Ubiquitous, you have to
agree is a very cool word with an even more fascinating definition. Don’t look it up. It
means omnipresent.
Likewise, I have been known to think deeply about a certain spice,
herb or ingredient when I consider a new recipe. It’s as if I play a game called name
that ingredient and let’s see if I can actually make it taste good with a bunch of other
stuff I throw in. I’d like to say more intelligence surrounds the whole process of
formulating new dishes, okay sometimes I do a few trial and error pre-selection
developmental procedures that includes a little research. Uh, yeah I’m kidding it pretty
much goes down like I said involving the whole game thing.
Take this week for example, ham and a hankering for some Italian–that’s my current
muse. As ubiquitous as ham is during the holidays, how fitting that I spend time
dreaming about it. Sometimes, like today, I hit the proverbial jack pot when I turn my
one ingredient into a winner of a meal. And as it turns out, it’s something to write home
about. If you want a break from the familiar and usual, sample this dish. Wonderfully
simple yet rich in flavor and it’s just different.
Ravioli Salad

Wonderfully simple yet rich in flavor and it’s just different.
Ingredients
- 1 pre-packaged tortellini or ravioli (found in the cheese section usually)
- 1 jar roasted red pepper sliced in strips
- 2/3 cup cubed ham can use salami or pepperoni
- 1 small jar artichoke hearts rough chopped
- 4 pepperoncini pepper
- 4 T. feta cheese
- 12 cherry or grape tomatoes whole or chopped
- 4 T. pesto sauce can make your own or buy it
- 1 bottle favorite italian dressing or make your own (recipe below)
- 1 can pitted black olives drained and tossed in whole or chopped
Instructions
- Prepare ravioli according to package. Rinse, drain. Mix all the ingredients in a bowl. Top with vinaigrette.
- Vinaigrette: ( you can use your favorite bottle of italian dressing)
2 T. dijon mustard
1 garlic clove chopped
salt
pepper
1 tsp. fresh chopped oregano
1 tsp. fresh chopped basil
1/2 cup apple cider vinegar
1 cup olive oil
Whisk first seven ingredients and slowly add the olive oil.

The ingredient list says what to do with the ingredients i.e. chopped, or rough chopped. Then in the instructions it says to prepare the packaged ravioli or tortellini according the package and add the rest of the chopped ingredients.
